I CAN’T BELIEVE IT’S DUCK . . . but it is.

Believe it or not, but many avid duck hunters don’t like to eat duck.
In fact, Vicki Patterson, who has written the ultimate book on how to cook duck – I Can’t Believe It’s Duck – said people should not be afraid to cook duck . . . even if 99 percent of the people you ask don’t like to eat it.
Finally, there’s a cookbook that will help you clean out that freezer full of duck.
Patterson, who owns a catering business in Hagerman, Idaho, and Champion of Champion duck caller Buck Gardner of Memphis have teamed up to produce a book (suggested retail price $19.99) that should be required reading for all duck hunters.
Let Patterson show you how to take every day recipes, combine her secrets of cooking tender and tasty duck, and turn that duck in the freezer into delicious appetizers, salads, soups and sandwiches that the whole family will enjoy.
“Surprise your guests with a special dinner and they won’t believe it’s duck,” said Gardner, president of Buck Gardner Calls. “The Duck Lady (as Buck and others call Patterson) has recipes that are so easy and the book is formatted so that a novice cook can use it.”
Patterson, who lives about 90 minutes from Idaho’s Sun Valley ski resort, said it was “by-chance” that she first started cooking ducks. A customer asked if she’d cook some ducks for him.
“He told me how much he loved the way I cooked,” Patterson said. “I told him I’d never eaten any duck. I hated duck. Duck, I thought, was nasty. I told him to bring me a duck and I’d practice.”
The rest, as they say, is history.
In less than a week Patterson was up to five courses of duck, not counting all the ducks she’d “thrown out” that didn’t meet her taste and appearance qualifications. From there, more and more people started asking for ducks cooked by Patterson.
Before she knew it her duck recipes and methods had created fabulous meals using other wild games and meats.
Things like Smokey duck and bacon dip and Jamaican duck salad.
And, as Gardner likes to say, “You’ll never give away another duck!”
